Annilu Jamaican Fruit Cup Cake
Prepare Annilu Jamaican Fruitcake mix as directed.
Fill small cup cake tins ¾ full
Bake for 20 mins at 350 ® F or until centre springs back when touched.
When cooled top with butter cream frosting
Makes 18 cup cakes.
BUTTER CREAM FROSTING:
1 lb. icing sugar (sifted)
¼ lb. butter
¼ lb. shortening
1 tsp. vanilla
2 tbsp. milk
METHOD:
Cream butter and shortening until fluffy
Add vanilla
Add icing sugar a little at a time beating well after each addition
Add milk and beat on high speed until fluffy.
